So, this recipe that incorporates beefy tomatoes with French fries gave me a great excuse to go get some hot, crispy French fries. And before you start judging me for adding unhealthy French fries into a mealprep program, take note that mealprep is hard work so it’s okay to take a break once in a while to spice up a meal prep program. I go by the adage that anything in moderation can be good for you. The bad stuff starts to happen when one eats imbalanced meals.

Heck, we’re on week 172 of meal prepping (aka eating the same meal for a week for 172 weeks) already! I think we deserve some French fries. We were inspired by this recipe from Genius Kitchen. Here’s how our meal turned out from following our recipe vs. their recipe. Can you guess which one is ours?

Answer: we made the left one! For once our meal from our personal uglykitchenTM looks not too shabby compared to the professional-ish one.

Lomo Saltado with Herbs Recipe

Beef with tomatoes, French fries, and herbs
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 6 people


  • 2 lbs beef tenderloin
  • 5 tomatoes
  • 1/2 purple onion
  • 3 sprigs thyme from our garden
  • 10 leaves fresh basil from our garden
  • 2 large french fries from fast food chain (or make your own or buy them frozen)
  • 4 cloves garlic
  • 1 tablespoon red wine vinegar
  • 1 tablespoon soy sauce

Recipe Notes

  1. Cut up tomatoes into quarters. Slice the onions. Mince the garlic. Coarsely chop the thyme and basil.
  2. Heat up oil in a large stock pot until hot but not smoking. Cut beef into bite sized pieces. Season beef with salt and pepper. Add beef to large stock pot. Cook for 3 minutes, stirring occasionally until the beef is brown on the outside.
  3. Remove beef from pot. Add tomatoes, onions, and half of the garlic. Cook for 3 minutes or until onions are translucent but still crispy.
  4. Add french fries and red wine vinegar and soy sauce.
  5. Add beef back into the pot. Add thyme, basil, and the remaining garlic. Cook for another 3 minutes whilst stirring.



So, that’s all. Quick, easy, and delicious recipe for our busy lifestyles.
