Lomo Saltado with Herbs Recipe

Beef with tomatoes, French fries, and herbs

Ingredients

  • 2 lbs beef tenderloin
  • 5 tomatoes
  • 1/2 purple onion
  • 3 sprigs thyme from our garden
  • 10 leaves fresh basil from our garden
  • 2 large french fries from fast food chain (or make your own or buy them frozen)
  • 4 cloves garlic
  • 1 tablespoon red wine vinegar
  • 1 tablespoon soy sauce

  1. Cut up tomatoes into quarters. Slice the onions. Mince the garlic. Coarsely chop the thyme and basil.
  2. Heat up oil in a large stock pot until hot but not smoking. Cut beef into bite sized pieces. Season beef with salt and pepper. Add beef to large stock pot. Cook for 3 minutes, stirring occasionally until the beef is brown on the outside.
  3. Remove beef from pot. Add tomatoes, onions, and half of the garlic. Cook for 3 minutes or until onions are translucent but still crispy.
  4. Add french fries and red wine vinegar and soy sauce.
  5. Add beef back into the pot. Add thyme, basil, and the remaining garlic. Cook for another 3 minutes whilst stirring.
