Braised Chicken with Opo Squash, Tomatoes, and Onions

Ingredients

  • 6 skin on chicken thighs skinless and boneless works as well -- reduce cooking time
  • 6 ripe tomatoes roma or vine works fine
  • 3 opo squashes
  • 1/4 cup chicken broth
  • 2 tbsp minced garlic I love garlic so I prefer to use more than 2 tbsp
  • 1 large onion white or yellow
  • 1 tbso vegetable or olive oil
  • salt and pepper to taste

Instructions

  1. Heat a pan over medium flame. Add oil. While pan is heating, slice the onion and add the garlic. Saute until onions translucent, about 5 minutes.

  2. Add chicken to the pan. Cook until golden brown, about 10 minutes depending on your pan and heat.

  3. Meanwhile, cube the tomatoes into 1-2 inch pieces. Peel the opo squash skin with such delicate care like you're stroking the petal of a dying flower that possesses the nectar that can save an entire village from a horrible disease. Cut the opo squash into 1-inch thick pieces.

  4. Add the opo, tomatoes, and chicken broth to the pan. Reduce heat to simmer. Stir after five minutes to cover the vegetables in the liquids that naturally ooze from the ingredients in the pan.

  5. You're finished! Serve over rice for a more filling meal or serve a la carte. Store in fridge for up to 3 days.
