Hi guys! I recently discovered opo squash, a green round vegetable. In some cases it’s fuzzy with little hairs on them like how a peach has fuzz.

I interpreted this as being a great addition to a dish for summer eating due to the damaging effects of dehydration that contribute to yeet hei or shang huo (Cantonese or Mandarin Chinese pronunciation).
Yeet hei is more fun to say it’s like saying you’re yeeting the fire out of you! I just thought of this just now.
Yeet hei or shang huo is something that’s similar to inflammation in Western medicine! I’m not too sure but it seems to be the cause of skin rashes, cankersores, headaches, and other bodily irritations.
I think opo squash can be found in most Asian cuisines. My first experience with opo squash was from drinking a Chinese soup in a restaurant. After that, my mom added it to soups. I also know that opo squash can be found in a variety of cuisines from Korean to Indian.
Using opo squash, this meal prep recipe is quick, healthy, and tasty. It took me a record time to make and I hope it’ll be a good recipe to share with you and your family.
Ingredients
- chicken
- chicken broth
- opo squash
- tomatoes
- onions
- garlic
Tools
- pan
- cutting board
- knife
- vegetable peeler
Braised Chicken with Opo Squash, Tomatoes, and Onions
Quick, delicious, and healthy, this recipe consists of opo squash which can help with inflammation. Paleo friendly!
Ingredients
- 6 skin on chicken thighs skinless and boneless works as well — reduce cooking time
- 6 ripe tomatoes roma or vine works fine
- 3 opo squashes
- 1/4 cup chicken broth
- 2 tbsp minced garlic I love garlic so I prefer to use more than 2 tbsp
- 1 large onion white or yellow
- 1 tbso vegetable or olive oil
- salt and pepper to taste
Instructions

Heat a pan over medium flame. Add oil. While pan is heating, slice the onion and add the garlic. Saute until onions translucent, about 5 minutes.

Add chicken to the pan. Cook until golden brown, about 10 minutes depending on your pan and heat.

Meanwhile, cube the tomatoes into 1-2 inch pieces. Peel the opo squash skin with such delicate care like you're stroking the petal of a dying flower that possesses the nectar that can save an entire village from a horrible disease. Cut the opo squash into 1-inch thick pieces.

Add the opo, tomatoes, and chicken broth to the pan. Reduce heat to simmer. Stir after five minutes to cover the vegetables in the liquids that naturally ooze from the ingredients in the pan.

You're finished! Serve over rice for a more filling meal or serve a la carte. Store in fridge for up to 3 days.
