Shortbread Cookie Recipe with No Eggs

Welcome again to my ugly kitchen recipes! Today we are preparing for the holidays with a warm glass of milk and a special kind of shortbread cookie recipe with no eggs…

Sometimes, we just run out of eggs in the refrigerator. And, oftentimes we crave some delicious cookies with melted chocolate.

What better way to problem solve our cravings and “scarce resources” than to make cookies without eggs?

These cookies are thin but soft like the perfect texture of snow. The chocolate oozes all over the cookies, leaving a gleaming drizzle by the fireplace.

Very Delicate Shortbread Cookie Recipe *No Eggs*

These shortbread cookies are very delicate and go perfectly with a glass of milk. Snuggle up for the holidays with my recipe. There are *no eggs* in this cookie recipe.

Ingredients

  • 1 stick butter 1 stick is 1/2 cup butter
  • 3/4 cup all purpose flour
  • 3/4 cup brown sugar
  • 1/8 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup hot water
  • 1/2 teaspoon baking soda
  • 1 cup 72% cocoa baking chips optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using room temperature butter, if possible, (I usually let it sit on the preheated oven stove top to let it warm up)  add the white and brown sugar together in a large bowl. Beat until the mixture is fluffy and light (it should form peaks when you beat the mixture) 

  2. Add the flour and mix.

  3. Combine the boiling water and baking soda. Then add it to the flour mixture.

  4. Mix well.

  5. Form small dollops about the size of a 1/4 inch onto a wax paper lined baking sheet.

  6. Bake for 10-12 minutes. Do not over bake.

To make the chocolate drizzle

  1. Meanwhile, add chocolate to a bowl and microwave for 2 minutes, 30 seconds at time. 

  2. Let it cool for about 5 minutes. Then pour into a ziploc bag. 

  3. When the cookies are out of the oven, clip a small corner of the ziploc bag and drizzle onto the cookies your desired pattern.
